Meal Plan Monday – post Hen Do

After a weekend of Hen fun I’m feeling lazy and can’t be bothered to cook properly, apparently as you get older and have more children it’s harder to recover from one night’s drinking. So here is my hungover meal plan for the week.


Bacon, creme fraiche, pesto pasta, served with salad and garlic bread.  For this pasta dish the best type is to use tagliatelle, the rest is obvious, fry the bacon (and mushrooms if you have any) cook the pasta, once the pasta is drained add creme fraiche, pesto and bacon. Easy peasy.


Spanish omelette, a personal favourite of mine, served with salad again.


Gammon steak, pineapple, sweet potato wedges and peas.


Roasted veg with sausages cooked on top, served with cous cous.  Any veg I have in the fridge goes in the roasting tin to cook, always including cherry tomatoes because they add juice, drizzle olive oil and balsamic vinegar with a sprinkling of oregano, then add the sausages after 20min (or earlier if you have fatter sausages).


Sardine linguine, I know this is another pasta dish but it’s so simple and delicious.  Add a tin of sardines (per person and the oil – it needs to be in oil), 1 tin of anchovies (2 per person), a dash of fish sauce (I don’t follow recipes but if I had to give a proportion about a tablespoon per person), cherry tomatoes (at least 4 each), a sprinkling of chilli flakes (more if you like it hot) and if you don’t have a husband allergic to prawns, some prawns.  It all goes into a large frying pan, simmer lightly until the anchovies have melted and the tomatoes have burst, add to cooked linguine (or spaghetti) and serve, absolutely delicious.


Pizza from the supermarket, I know home made is far superior but this week I really don’t want to cook.
