As I’ve previously written I bought the Christmas Good Housekeeping and in it was a great supplement on Christmas tips and recipes (jeez I’m old). A cocktail recipe caught my eye and I will be having at least one on Christmas day, pomegranate gin fizz.
- 75ml (3 fl oz) gin
- 150ml (5 fl oz) pomegranate juice
- 300ml (10 fl oz) Prosecco
- for a garnish, pomegranate seeds
This recipe makes six champagne flutes, mix the gin and juice and pour into glasses, top up with the prosecco and garnish with the seeds. Simple and I’m sure delicious, who doesn’t love gin and prosecco?
If you’re pregnant I’ve also found another delicious looking mocktail, obviously can be given to drivers as well. The BBC Good Food have a pomegranate mojito.
- 3 tbsp pomegranate seeds
- big bunch mint
- 2 limes, quartered, plus slices to garnish
- 1l pomegranate juice
- 500ml lemonade
This makes 1.5l and takes a little preparation. The day before divide the pomegranate seeds into ice-cube tray, top up with water and freeze. With half the mint tear up and put into a large jug with the limes, take a rolling-pin and bash (like making a normal mojito), then add the juice and lemonade. Serve with the ice cubes and if you can be bothered strain the mixture when serving.
