Monday Meal Plan – week 3 of January’s budget

So over the last two weeks I’ve managed to spend exactly the same amount of euros almost to the cent by really sticking to the meal plan when supermarket shopping. I’m hoping to come in at €55 or less again this week in order to keep our weekly food budget of under $100 (we eat out once or twice a week so . Yes we do work in multiple currencies all of the time. We often add in some £££s to keep it

Monday Chicken & snake bean stir fry with cauliflower rice

Chinese food in five minutes Amy gave me Chinese Food in Minutes for my birthday a few years ago (I LOVE recipe books as presents in case anyone wondered…!) and it’s absolutely brilliant. Proper Chinese restaurant taste, actually significantly better, but without the MSG or any nasties.

 

Tuesday Taco Pizzas <- not quite this recipe as if you know James, tomatoes are on his hate-list but pretty similar.

Screen Shot 2015-01-05 at 7.48.41 PMWednesday Potato and Spinach Frittata. This book was given to us when we got married by lovely friends and a lot of our regulars hailed from here originally. I love it because it’s broken down into months so you can cook by what’s in season.

 

Thursday Pulled Pork and salad. No week goes by without at least one Pioneer Woman meal in our list and this is a favourite.

Friday Steak and salad, possibly homemade chips too.

Saturday & Sunday It’s a Bank Holiday weekend for us so we’ll be out and about.
