Who needs a coffee shop when I can make my own delicious iced coffee?

When I say delicious iced coffee, I really mean one that can be included in the diet I’m currently on.  What I can’t have is:

  • Caffeine
  • Dairy
  • Alcohol
  • Sugar

So a delicious frappe style drink with extra cream on top is out.

When I was in the supermarket a week ago buying my almond milk, I noticed that they sold iced coffees made with this so called ‘milk’.  Realising it had caffeine in I had to give it a miss but it was hot, very hot so I decided to make my own using ingredients allowed.

It is the easiest thing to make, so here is my iced coffee recipe:

  • Decaf instant coffee (a good one otherwise it’s vile)
  • Almond milk
  • Boiling water
  • Ice and lots of it

Boil the kettle, whilst this is happening add coffee to a glass. Once boiled pour enough to dissolve the instant coffee.  Add ice. Lots and lots.  Pour almond milk over.

Not exactly a recipe per se. More like teaching you to suck eggs.  I did offer a friend one. I made hers with full fat cows milk and full caffeine and she told me it was delicious. I imagine it was.  Even though mine was clearly going to taste inferior to hers I still felt I was treating myself in this warm weather.

My point is, don’t waste money at coffee shops buying stupidly expensive iced coffees when you can make your own at home and have it taste just a good if not better.  Think of the possibilities:

  • A dash of vanilla paste (I’d add it in with the boiling water)
  • Coconut milk instead of cows or almond
  • A spoonful of cocoa with the coffee to make a cold mocha
  • Sugar to make it sweet
  • Baileys, rum, brandy. Surely it’s 5 o’clock somewhere?

Whilst you sit down enjoying your iced coffee with additions or even cows milk, think of me with my caffeine and dairy free one!
